* | 1 tsp. garlic salt |
* | 1 lb. tri-color rotini (spiral) pasta |
* | 4 oz. snow peas, stringed and halved across at a diagonal angle |
* | 1 green bell pepper, diced |
* | 1 red bell pepper, diced |
* | 2 carrots, peeled, cut in half lengthwise, then chopped |
* | 1 cucumber, peeled, sliced thickly and quartered |
* | 1 red onion, diced |
* | salt and pepper, to taste |
* | DRESSINGS |
* | Lemon Mayonnaise |
* | 1/2 cup mayonnaise |
* | 1/2 cup sour cream |
* | 2 tsp. fresh lemon juice |
* | Italian Dressing |
* | 1 cup Italian dressing |
* | 2 tsp. fresh lemon juice |
* | Thousand Island Dressing |
* | 1 cup Thousand Island dressing |
* | 2 tsp. fresh lemon juice |
1 | Bring a large pot of water to boil. Add garlic salt. Add pasta and cook according to package directions. Drain and rinse pasta in cold water. |
2 | Separately, cook snow peas in salted boiling water for 2 minutes. Drain and plunge into cold water to stop cooking process. |
3 | Combine pasta and all vegetables in large serving bowl. |
4 | Choose ONE dressing from above, depending upon your tastes: Lemon Mayonnaise, Italian Dressing or Thousand Island Dressing. Mix dressing ingredients. Add to pasta and toss to mix thoroughly. Salt and pepper to taste. Serve chilled. |
