Spring-y Pasta Primavera
Makes 6 - 8 Servings
*1 tsp. garlic salt
*1 lb. tri-color rotini (spiral) pasta
*4 oz. snow peas, stringed and halved across at a diagonal angle
*1 green bell pepper, diced
*1 red bell pepper, diced
*2 carrots, peeled, cut in half lengthwise, then chopped
*1 cucumber, peeled, sliced thickly and quartered
*1 red onion, diced
*salt and pepper, to taste
*Lemon Mayonnaise
*1/2 cup mayonnaise
*1/2 cup sour cream
*2 tsp. fresh lemon juice
*Italian Dressing
*1 cup Italian dressing
*2 tsp. fresh lemon juice
*Thousand Island Dressing
*1 cup Thousand Island dressing
*2 tsp. fresh lemon juice
1Bring a large pot of water to boil. Add garlic salt. Add pasta and cook according to package directions. Drain and rinse pasta in cold water.
2Separately, cook snow peas in salted boiling water for 2 minutes. Drain and plunge into cold water to stop cooking process.
3Combine pasta and all vegetables in large serving bowl.
4Choose ONE dressing from above, depending upon your tastes: Lemon Mayonnaise, Italian Dressing or Thousand Island Dressing. Mix dressing ingredients. Add to pasta and toss to mix thoroughly. Salt and pepper to taste. Serve chilled.
