Spring Thyme Chicken with Garlic, Lemon & Thyme
Makes 6 Servings
*1 5-6 lb. roasting chicken
*salt and pepper
*1 lemon, cut in half
*2 tbls. extra virgin olive oil
*3 tbls. fresh thyme
*3 large garlic cloves, minced
*1 tbls. fresh lemon juice
1Preheat oven to 450 degrees.
2Rinse chicken inside and out. Pat dry. Season inside and out with salt and pepper. Insert one lemon half inside chicken cavity. Place chicken in roasting pan with rack.
3Mix together olive oil, thyme, garlic and lemon juice. Rub completely over chicken.
4Roast chicken for 30 minutes. Reduce heat to 350 degrees and continue cooking about 1 1/2 hours until done. (Meat thermometer inserted into thickest part of the thigh should register 180 degrees).
5Let stand 10-15 minutes before carving.
