Balsamic-Glazed Strawberry Shortcake
with Mascarpone Creme
Makes 6 Servings
*2 cups ripe strawberries, washed, hulled and sliced
*2 tablespoons good quality balsamic vinegar
*3 tablespoons granulated sugar
*8.8-ounce container mascarpone cream at room temperature
*1/2 cup heavy cream
*3 tablespoons brandy
*1/3 to 1/2 cup granulated sugar
*Angel Food slices or dessert cups
1Combine strawberries, balsamic vinegar and 3 tablespoons sugar in a small glass bowl; toss to combine. Refrigerate, covered, for 2-4 hours, stirring occasionally.
2To prepare the Mascarpone Creme, whip mascarpone and heavy cream together until stiff peaks form. Add brandy and sugar to taste, and whisk together until smooth.
3Place an angel food slice or cup on a plate. Spoon berries and syrup over and around. Top with mascarpone creme.
