Makes 6-8 Servings
*1 bunch thin-stemmed green asparagus (about 30 stems)
*5 strips thinly sliced prosciutto, sliced in half lengthwise
*Extra virgin olive oil
*Kosher salt and freshly ground black pepper
1Preheat oven to 375F degrees.
2Snip or cut off thick ends of asparagus. Gather 3 asparagus stems together and roll a 1/2 slice of prosciutto around the middle to form a bundle. Repeat with remaining asparagus and prosciutto.
3Place bundles on a baking sheet in a single layer. Drizzle with extra virgin olive oil. Top with a pinch of salt (the prosciutto will be salty - so don't over salt) and season with freshly ground black pepper to taste.
4Roast in oven for 15 minutes or until crisp but tender.
