Prosciutto-Wrapped
Asparagus
Makes 6-8 ServingsIngredients
* | 1 bunch thin-stemmed green asparagus (about 30 stems) |
* | 5 strips thinly sliced prosciutto, sliced in half lengthwise |
* | Extra virgin olive oil |
* | Kosher salt and freshly ground black pepper |
Instructions
1 | Preheat oven to 375F degrees. |
2 | Snip or cut off thick ends of asparagus. Gather 3 asparagus stems together and roll a 1/2 slice of prosciutto around the middle to form a bundle. Repeat with remaining asparagus and prosciutto. |
3 | Place bundles on a baking sheet in a single layer. Drizzle with extra virgin olive oil. Top with a pinch of salt (the prosciutto will be salty - so don't over salt) and season with freshly ground black pepper to taste. |
4 | Roast in oven for 15 minutes or until crisp but tender. |
