Maple-Roasted Salmon
Makes 6 Servings
*6 (6-ounce) Alaskan salmon fillets
*Kosher salt and freshly ground black pepper
*1/4 pound (1 stick) unsalted butter
*1 cup good quality maple syrup
*1/3 cup Dijon mustard
1Preheat oven to 375F degrees. Season salmon with salt and pepper.
2Melt butter in a glass baking dish in the oven. Arrange fish in the pan skin side-up and bake for 10 minutes.
3Combine maple syrup and mustard. Carefully flip fillets over (skin-side down). Brush the fish with the maple-mustard sauce and bake 5 minutes more or until salmon is cooked, but still slightly pink in the center.
