Plum Tomatoes with Mozzarella
Makes 4 Servings
*4 ripe plum tomatoes, diced
*1/4 lb. fresh mozzarella cheese, patted dry and diced
*4 scallions, sliced, white and light green parts only
*1 tbls. fresh tarragon (or basil), chopped
*2 tbls. olive oil
*1 tsp. balsamic vinegar
*salt and pepper, to taste
1Place tomato, cheese, scallions and tarragon (or basil) in serving bowl.
2Drizzle with olive oil and balsamic vinegar.
3Season generously with salt and pepper. Mix well. Serve immediately.
