
Plum Tomatoes with Mozzarella
Makes 4 ServingsIngredients
* | 4 ripe plum tomatoes, diced |
* | 1/4 lb. fresh mozzarella cheese, patted dry and diced |
* | 4 scallions, sliced, white and light green parts only |
* | 1 tbls. fresh tarragon (or basil), chopped |
* | 2 tbls. olive oil |
* | 1 tsp. balsamic vinegar |
* | salt and pepper, to taste |
Instructions
1 | Place tomato, cheese, scallions and tarragon (or basil) in serving bowl. |
2 | Drizzle with olive oil and balsamic vinegar. |
3 | Season generously with salt and pepper. Mix well. Serve immediately. |
