Garlic Mashed Potatoes
Makes 4 Servings
*2 1/2 lbs. Yukon Gold potatoes, peeled and halved
*1 tsp. garlic salt
*2-3 large whole garlic cloves, peeled and separated
*1/2 cup milk (or half & half)
*2 tbls. unsalted butter
*salt and pepper, to taste
1Place potatoes in large saucepan and cover with water. Season with garlic salt. Add whole garlic cloves. Bring to boil, cover, reduce heat and boil gently 30-35 minutes, until potatoes and garlic are tender. Drain well.
2Add milk and mash or beat until potatoes and garlic are light and creamy. Add butter and combine until melted.
3Season with salt and pepper. Serve immediately.
