Rum Raisin
Sweet Potato Pie
Makes 8 Servings
*1 cup sugar
*1/2 teaspoon ground nutmeg
*1/2 teaspoon ground cinnamon
*2 cups sweet potatoes, cooked and mashed
*1 egg
*1 tablespoon orange zest
*1/2 teaspoon vanilla bean seeds
*1/2 cup buttermilk
*1 cup dark raisins, soaked for 2 hours in 1/4 cup dark rum
*Pastry for 9-inch pie
1Preheat oven to 425F degrees.
2Combine sugar, nutmeg, cinnamon, sweet potatoes, egg, orange zest, vanilla bean seeds and buttermilk in a large mixing bowl. Mix on medium speed of an electric mixer until texture is smooth. Fold in raisins and rum; then pour into the pie shell. Bake for 10 minutes.
3Lower oven temperature to 350F degrees and bake for 45 minutes or until the filling is set or when a knife inserted in the center comes out clean. Cool on a wire rack.
