Sesame-Crusted Chicken
Makes 4 Servings
*4 skinless chicken breast halves, boned and defatted
*1 tablespoon sesame seeds
*1 tablespoon black sesame seeds
*1/4 teaspoon salt
*1 tablespoon sesame oil
1With a meat mallet, pound chicken breasts to 1/2-inch thick between 2 sheets of wax paper.
2In a shallow bowl, combine sesame seeds and salt and sprinkle over chicken breasts.
3In a large saute pan, heat sesame oil over medium heat. When oil is hot, saute chicken breasts until golden brown and cooked through, about 3 to 5 minutes on each side. Juices will run clear when meat is pierced with a fork.
  • Sesame seeds are high in heart-healthy oils that can help raise "good" HDL cholesterol. Look for the black ones in Asian markets and health-food stores.
