Molasses Cookies
Makes 3 Dozen
*1/2 cup butter
*1/2 cup shortening (not margarine)
*1 1/2 cups sugar
*1/2 cup molasses
*2 eggs, slightly beaten
*4 cups Stonewall Kitchen Farmhouse Pancake and Waffle Mix
*1/2 teaspoon salt
*1 teaspoon baking soda
*2 1/4 teaspoons ground ginger
*1 1/2 teaspoons ground cloves
*1 1/2 teaspoons ground cinnamon
1In a large bowl, cream together butter, shortening and sugar. Beat in molasses and eggs. Set aside.
2In another bowl, combine pancake mix, salt, baking soda, ginger, cloves and cinnamon.
3Gradually mix flour mixture with creamed ingredients until the dough is smooth.
4Spoon onto a greased cookie sheet. Bake at 350F degrees for about 11 minutes. Do not over bake. Cool on a wire rack.
