Crispy Crunchy Turkey Bites
Makes 6 Servings
Ingredients
*1 package Shady Brook Farms or Honeysuckle White Turkey Breast Tenderloins or Breast Cutlets
* FOR THE MARINADE:
*1 clove garlic, minced
*1 tablespoon ginger, fresh, minced
*1 tablespoon lemon juice, freshly squeezed
*1 tablespoon soy sauce
* FOR THE DIPPING SAUCE:
*1/2 cup apricot preserves
*1 teaspoon dry mustard
*1 teaspoon boiling water
*1 tablespoon lemon juice
* FOR THE COATING:
*3/4 cup blanched almonds, finely ground
*1/4 cup sesame seeds
* FOR FRYING:
*2 cups vegetable oil
Instructions
1Slice the turkey meat into one-inch slices.
2To prepare the marinade, mix the garlic, ginger, lemon juice and soy sauce in a large, sturdy, sealable plastic bag. Place the turkey in the marinade and refrigerate overnight.
3To prepare the Dipping Sauce, melt the apricot preserves in a small saucepan until smooth. In a small serving bowl, mix the mustard and hot water until smooth. Blend the apricots and lemon juice into the mustard mixture. Set aside to cool.
4To prepare the coating, mix the ground almonds and sesame seeds.
5Heat about 2 cups of vegetable oil over medium heat in a large skillet to about 350F degrees. Dip the turkey pieces in the almond-sesame coating and deep-fry, several at a time, until golden brown on each side, about 1 minute. If they brown too fast, remove the skillet from the heat for a few minutes and reduce the heat.
6Drain the turkey bites thoroughly on paper towels before serving hot with the Dipping Sauce.
