Oven Roasted Red Potatoes
Makes 6 servings
*3/4 tbls. olive oil
*1 tbls. margarine
*4 lbs. red (new) potatoes, scrubbed, dried and cut into bite-size chunks
*1 large red onion, sliced into thick chunks
*8 oz. mushrooms, cleaned, stems trimmed and caps sliced thickly into quarters
*1/2 tsp. salt
*1/2 tsp. garlic salt
*1/4 tsp. pepper
*1 cup chicken broth
1Preheat oven to 400F degrees.
2Combine oil and margarine in 9 x 13" glass baking dish.
3Add potato chunks, sprinkle onion over potatoes and scatter sliced mushrooms on top.
4Add salt, pepper and garlic salt.
5Pour chicken broth over and mix all ingredients together.
6Bake for 1 hour, stirring occasionally to mix.
