Sicilian Chopped Salad
Makes 4 Servings
*6 cups romaine lettuce leaves, torn
*1/2 cup diced, drained roasted red peppers
*1/2 cup halved, pitted Kalamata olives or black olives
*4 ounces (1 cup) sliced salami or pepperoni, cut into strips
*4 pepperoncini peppers, sliced (optional)
*1/2 cup Italian or Caesar salad dressing
*1 1/2 cups (6 ounces) Sargento Angel Hair Shredded Parmesan, Mozzarella & Romano Cheeses, divided
*1 cup garlic-flavored croutons
*Pepper (optional)
1Combine lettuce, peppers, olives, salami and pepperoncini peppers, if desired, in a large bowl. Add salad dressing; toss.
2Add 1 1/4 cups cheese and croutons; toss. Transfer to serving plates; top with remaining cheese and serve with pepper, if desired.
  • Variation: Serve Sicilian Chopped Salad in pita bread for a hearty sandwich.
