Grilled Whiskey & Cola
Marinated Pork Tenderloin
Makes 4 Servings
*1 tablespoon kosher salt
*1 teaspoon Chinese 5-spice powder
*4 tablespoons light brown sugar
*1/2 cup Kentucky bourbon whiskey
*1/2 cup diet cola
*1 tablespoon Dijon mustard
*1 1/2 to 2 pounds pork tenderloin(s)
*Salt and freshly ground black pepper to taste
*Olive oil, for brushing
1Whisk together the salt, spice powder, brown sugar, whiskey, cola and Dijon mustard until they are completely dissolved.
2Pour into a glass baking dish or large plastic zip-locking marinade bag. Add pork tenderloin and marinate in the refrigerator 4-8 hours, turning often.
3Preheat an outdoor grill or grill pan.
4When ready to cook, remove pork tenderloin from marinade and discard marinade.
5Season tenderloin with salt and pepper. Brush with olive oil to prevent sticking on the grill.
6Grill about 15-20 minutes or to desired doneness. Slice and serve.
