Turkey Drumettes
Makes 6 Servings
*3 1/2 pounds Shady Brook Farms or Honeysuckle White Turkey Wing Drumettes
*8-ounce can crushed pineapple packed in its own juice, including liquid
*2 teaspoons cornstarch
*1/2 teaspoon reduced-sodium soy sauce
*1/4 teaspoon ginger
*1/4 teaspoon chili powder
*1/4 teaspoon crushed, dried hot red pepper
*Pinch of unseasoned salt substitute (optional)
1Preheat oven to 325F degrees.
2Place turkey drumettes in an ungreased 12"x8"x2" baking pan. Spoon pineapple and juice over turkey. Bake, covered with foil, for 1 hour. Drain off pan drippings into a small, heavy saucepan.
3In a small bowl, blend a small amount of the pan drippings with cornstarch until smooth; then blend mixture into remaining pan drippings. Add soy sauce, ginger, chili powder, red pepper and salt substitute. Stirring constantly, cook over medium heat until mixture is hot and bubbly.
4Spoon over turkey and continue baking uncovered for 35 to 45 minutes or until turkey is fork tender and golden brown.
