Waldorf Turkey Sandwiches
Makes 4 Servings
*1 1/4 cups Shady Brook Farms or Honeysuckle White Turkey Breast Tenderloins, cooked and cubed
*1 small red apple, chopped
*1/4 cup celery, diced
*3 tablespoons fat-free mayonnaise
*2 tablespoons plain non-fat yogurt
*2 tablespoons walnuts, chopped
*1 tablespoon raisins
*1/8 teaspoon ground nutmeg
*1/8 teaspoon ground cinnamon
*8 slices raisin bread
*4 leaf lettuce leaves
1In a large bowl, combine the turkey, apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg and cinnamon. Cover and refrigerate for 1 hour.
2Toast bread on light setting in the toaster.
3Spoon 3/4 cup of the mixture onto 4 slices of bread; top with a lettuce leaf and remaining slices of bread.
