Snow Peas with Chive Butter
Makes 2+ servings
*4 tbls. butter, softened
*2 tsps. chopped chives
*salt and pepper, to taste
*8 oz. snow peas, trimmed and stringed
1To prepare chive butter, mix softened butter with chopped chives. Season with salt and pepper.
2Place butter mixture on a piece of plastic wrap, roll up into a log and refrigerate. (Can be prepared up to 2 days ahead).
3Bring saucepan of water to boil. Add snow peas and cook until bright green and crisp. Drain and plunge momentarily into cold water to stop the cooking process.
4Serve snow peas with chive butter.
