* | 1 teaspoon kosher salt |
* | 1/4 teaspoon freshly ground black pepper |
* | 1 teaspoon Chinese five spice powder |
* | 1/2 teaspoon nutmeg |
* | 1 1/2 teaspoons ground cinnamon, divided |
* | 4 pound boneless rolled pork roast |
* | 1/4 cup water |
* | 1/4 cup honey |
* | 1/4 cup Kentucky straight bourbon whiskey |
* | 1 tablespoon fresh lemon juice |
* | 2 large apples, peeled, cored and diced |
1 | Preheat oven to 325F degrees. |
2 | Mix salt, pepper, five spice powder, nutmeg and 1/2 teaspoon cinnamon together in a small bowl. Rub over the outside of the roast. Place roast fat-side-up on a baking rack in a shallow roasting pan. |
3 | Roast until meat reaches an internal temperature of 170F degrees, about 2 hours. Transfer to serving platter. |
4 | In a medium skillet, combine water, honey, whiskey, lemon juice and remaining 1 teaspoon cinnamon; bring to a boil. Add apples, reduce heat and simmer, covered, for about 7-8 minutes until the apples are tender. |
5 | Slice roast and serve with spiced apples. |
