Roast Pork
with Spiced Apples
Makes 6 Servings
*1 teaspoon kosher salt
*1/4 teaspoon freshly ground black pepper
*1 teaspoon Chinese five spice powder
*1/2 teaspoon nutmeg
*1 1/2 teaspoons ground cinnamon, divided
*4 pound boneless rolled pork roast
*1/4 cup water
*1/4 cup honey
*1/4 cup Kentucky straight bourbon whiskey
*1 tablespoon fresh lemon juice
*2 large apples, peeled, cored and diced
1Preheat oven to 325F degrees.
2Mix salt, pepper, five spice powder, nutmeg and 1/2 teaspoon cinnamon together in a small bowl. Rub over the outside of the roast. Place roast fat-side-up on a baking rack in a shallow roasting pan.
3Roast until meat reaches an internal temperature of 170F degrees, about 2 hours. Transfer to serving platter.
4In a medium skillet, combine water, honey, whiskey, lemon juice and remaining 1 teaspoon cinnamon; bring to a boil. Add apples, reduce heat and simmer, covered, for about 7-8 minutes until the apples are tender.
5Slice roast and serve with spiced apples.
