Twice-Baked Scallion Potatoes
Makes 2+ servings
*2 large baking potatoes
*3 tbls. butter, divided
*4 scallions, chopped, white and light green parts only
*1/4 cup milk or half & half
*salt and pepper, to taste
*2 tsps. chopped chives
1Bake potatoes in 400 degree oven for 1 hour.
2When cooled, slice potatoes in half lengthwise and scrape potato pulp into a medium saucepan. Reserve potato shells.
3Separately, melt 2 tbls. butter in small saucepan. Add scallions and saute until softened.
4Mash potatoes with milk. Add melted butter/scallion mixture and combine thoroughly.
5Stuff potato mixture back into potato shells. Brush with remaining 1 tbls. melted butter. Season with salt and pepper.
6Set potatoes on metal baking sheet with rack. Place under broiler until browned on top, 5-8 minutes. Sprinkle with chopped chives before serving.
