
Twice-Baked Scallion Potatoes
Makes 2+ servingsIngredients
* | 2 large baking potatoes |
* | 3 tbls. butter, divided |
* | 4 scallions, chopped, white and light green parts only |
* | 1/4 cup milk or half & half |
* | salt and pepper, to taste |
* | 2 tsps. chopped chives |
Instructions
1 | Bake potatoes in 400 degree oven for 1 hour. |
2 | When cooled, slice potatoes in half lengthwise and scrape potato pulp into a medium saucepan. Reserve potato shells. |
3 | Separately, melt 2 tbls. butter in small saucepan. Add scallions and saute until softened. |
4 | Mash potatoes with milk. Add melted butter/scallion mixture and combine thoroughly. |
5 | Stuff potato mixture back into potato shells. Brush with remaining 1 tbls. melted butter. Season with salt and pepper. |
6 | Set potatoes on metal baking sheet with rack. Place under broiler until browned on top, 5-8 minutes. Sprinkle with chopped chives before serving. |
