Corn Muffins
with Cheddar & Scallions
Makes 6 Muffins
*8-ounce package corn muffin mix
*1/2 cup milk
*1 large egg
*1 cup grated extra-sharp cheddar cheese
*3 scallions, chopped
1Preheat oven to 400F degrees. Grease muffin tin or line with paper baking cups.
2To prepare batter, combine corn muffin mix, milk, egg, cheese and scallions in a large mixing bowl. Stir to combine until moistened. Batter will be lumpy.
3Spoon batter into muffin pan.
4Bake muffins until lightly browned and tester inserted into center comes out clean, about 20 minutes. Transfer to a baking rack to cool.
