Fresh Tomato Soup with Heart-Shaped Parmesan Croutons
Makes 2+ servings
*2 tbls. butter or margarine
*1 small onion, finely chopped
*1 1/2 lbs. ripe tomatoes, roughly chopped.
*1 tsp. tomato paste
*1 cup chicken stock
*1 cup light cream
*1/2 tsp. salt
*dash of pepper
*4 slices thin-sliced white bread
*Heart-shaped cookie cutter
*1 clove garlic, cut in half
*1/2 cup grated Parmesan cheese
1Melt butter or margarine in large saucepan, add onion and saute until onion becomes translucent.
2Add tomato and tomato paste, cover and cook over medium heat about 10 minutes. Uncover and continue cooking to reduce juices, about 20 more minutes.
3Place tomato mixture in blender and process until smooth. Return to saucepan and add chicken stock, cream, salt and pepper. Cook over medium heat until heated through.
4Meanwhile, prepare croutons by using cookie cutter to cut 4 heart-shaped toast points (do not use crusts). Rub cut sides of garlic on both sides of bread cutouts.
5Place bread on baking sheet and cover cutouts with Parmesan cheese. Broil 2 minutes or until cheese is melted.
6Serve in wide, shallow soup bowls, top with 2 overlapping toast hearts. Sprinkle top with remaining Parmesan.
