Stuffed Pasta Shells
with Turkey Sausage
Makes 6 Servings
*1 pound sweet or hot Italian turkey sausage, such as Shady Brook Farms or Honeysuckle White
*2 eggs, beaten
*15-ounce container part skim ricotta cheese
*2 cups low-fat shredded mozzarella, divided
*1 1/2 teaspoons dried Italian seasoning
*Kosher salt and freshly ground black pepper
*26-ounce jar spaghetti sauce
*12-ounce package jumbo pasta shells, cooked & drained according to package directions
*Fresh chives, chopped, for garnish
1Preheat oven to 375F degrees.
2Remove sausage from casings and add to a nonstick skillet. Cook, breaking up sausage into small pieces, until well browned. Drain onto paper towels.
3Separately, combine eggs, ricotta, 1 1/2 cups mozzarella cheese, Italian seasoning, salt and pepper together in a medium bowl. Add drained sausage to cheese mixture and combine well.
4Pour approximately 1/2 cup of spaghetti sauce in the bottom of a 9" x 13" glass baking dish. Spoon approximately 1 tablespoon of sausage/cheese mixture into each cooked shell and arrange them in the baking dish. Top with remaining spaghetti sauce and sprinkle with remaining mozzarella cheese.
5Bake, uncovered, for 30 minutes or until heated through. Top individual servings with chopped chives.
