Low-Carb Filled Peppers
Makes 4 Servings
*1 pound Shady Brook Farms or Honeysuckle White Lean Ground White Turkey
*1 small onion, chopped
*2 large green bell peppers
*14 1/2-ounce can diced tomatoes
*8-ounce can tomato sauce with basil, garlic and oregano
*Salt and pepper to taste
*1/4 cup Parmesan cheese, grated
1Preheat oven to 375F degrees. Coat a medium skillet with cooking spray.
2Cook turkey and onions over medium heat until turkey is no longer pink.
3Meanwhile, cut peppers in half and clean out. Place peppers in a shallow baking dish.
4Spoon meat mixture into pepper shells. Top with tomatoes and tomato sauce. Season with salt and pepper to taste.
5Cover with foil and bake for 35 minutes. Top with Parmesan cheese and bake 5 minutes longer. Serve immediately.
