Rum-Raisin Baked Apples
Makes 4 Servings
*3 tablespoons light brown sugar
*2 tablespoons butter, cut into pieces
*1 teaspoon cinnamon, plus additional for dusting
*2 tablespoons dark rum
*1 1/2 ounces raisins
*4 medium baking apples, such as Golden Delicious, Cortland or Rome Beauty
*1 tablespoon fresh lemon juice
*Whipped cream topping or ice cream
1Preheat oven to 375F degrees.
2In a small saucepan, combine brown sugar, butter, 1 teaspoon cinnamon and rum. Cook over medium heat until melted into a bubbly syrup, about 4 minutes. Remove from heat and stir in raisins.
3Core apples using an apple corer or knife and melon baller. Peel off 1/2-inch of skin around the top of the apple. Brush tops and inside cavities of apples with lemon juice. Stand apples in a baking dish just large enough to hold them.
4Fill the center of each apple with the rum-raisin mixture, brushing some syrup over the peeled section of the apple.
5Bake 40-45 minutes or until apples are tender. Serve warm with whipped cream or ice cream, dusted with a bit of cinnamon on top.
