'Buy Me Some'
Peanuts & Caramel Corn
Makes 8 Servings
*2 cups sugar
*2/3 cup water
*1 tablespoon butter
*4 cups popped corn
*1 cup salted Spanish peanuts with skins
1Pour sugar into the center of a deep saucepan. Working carefully, pour water slowly into the pan so that it does not splash any sugar up the sides of the pan. Use a spoon to just moisten the sugar, but do not stir.
2Bring to a boil over high heat and cook, without stirring, until mixture becomes a golden caramel, about 10-15 minutes. Swirl the pan occasionally to even out the color, but do not stir.
3Remove from heat and swirl in butter. Add popcorn and nuts. Pour mixture onto a silicone baking mat and let cool a few minutes.
4When ready to handle, break into small clusters for serving. Transfer to an airtight container for storage.
