
'Out of the Park'
Potato Wedges
Makes 6 ServingsIngredients
* | 4 large russet baking potatoes, unpeeled and scrubbed clean |
* | 4 tablespoons olive oil |
* | Kosher salt and freshly ground black pepper |
* | 1 large clove garlic, finely chopped |
* | 2 teaspoons dried Italian seasoning |
* | 1/2 cup freshly grated Parmigiano-Reggiano cheese |
Instructions
1 | Preheat oven to 425F degrees. |
2 | Cut potatoes in half lengthwise, then cut each half into 3 long wedges lengthwise. Place on a baking sheet. |
3 | Drizzle olive oil over potatoes and season to taste with salt and pepper. Sprinkle garlic and Italian seasoning over top. Toss all ingredients together, making sure potatoes are coated with oil. Spread potatoes in a single layer with one cut-side down. Roast for 30 minutes. |
4 | Turn potato wedges so that the other cut side is down. Sprinkle cheese on potatoes and roast an additional 15 minutes or until potatoes are cooked through and skins are crisp. |
