Italian Turkey Sausage,
Peppers & Onion Hoagies
Makes 6 Servings
*1 1/4 pounds (6 sausages) sweet, lean Italian turkey sausage, such as Shady Brook Farms or Honeysuckle White
*1 tablespoon olive oil
*1 tablespoon margarine
*2 green peppers, seeded and sliced thin
*1 onion, sliced
*Salt and pepper to taste
*6 top-sliced hot dog buns
*Assortment of flavored mustards
1Prepare barbecue grill. Using the tip of a sharp knife, slightly pierce the sausage casings 3-4 times in each sausage. Grill over hot coals, turning frequently, about 20 minutes or until sausages reach an internal temperature of 170F degrees.
2Meanwhile, heat oil and margarine in a non-stick skillet. Add peppers and onions and season with salt and pepper. Saute over medium heat until peppers soften and onions begin to caramelize, about 10 minutes. Transfer to paper towels to drain.
3Place grilled sausages in buns. Slather with mustard and top with peppers and onions. (See Notes)
