Gemelli with Pecorino Dolce
and Aromatic Herbs
Makes 4 Servings
*5 tablespoons extra virgin olive oil
*3 tablespoons chopped fresh herbs, such as rosemary, sage, parsley, mint, thyme or marjoram
*1 garlic clove, minced
*16-ounce package Barilla Gemelli
*5 tablespoons grated pecorino romano cheese
*1 tablespoon unsalted butter
*1/4 teaspoon freshly ground black pepper
1Heat oil in large skillet over medium heat. Add herbs and garlic; saute for 1 minute, stirring occasionally.
2Cook gemelli according to package directions, except reduce cook time to 10 minutes. Drain pasta, reserving 1/4 cup cooking water. Return pasta to pot.
3Add hot pasta and reserved cooking water to the herb mixture; toss. Cook until water evaporates slightly, stirring occasionally. Add cheese, butter and pepper; mix well.
4Transfer to serving platter; serve immediately.
