Shrimp Louis
Makes 4 Servings
*1 head iceberg lettuce
*16-20 large chilled cooked shrimp
*2 ripe avocados, peeled, seeded and diced
*2 hard-cooked eggs, chopped
*Thousand Island dressing
1Wash lettuce well and spin or pat dry. Chop lettuce and place on serving plates.
2Top with shrimp, avocado and egg. Drizzle Thousand Island dressing on top. Season with salt and freshly ground black pepper and garnish with a wedge of lemon, if desired.
