* | 1 head iceberg lettuce |
* | 16-20 large chilled cooked shrimp |
* | 2 ripe avocados, peeled, seeded and diced |
* | 2 hard-cooked eggs, chopped |
* | Thousand Island dressing |
1 | Wash lettuce well and spin or pat dry. Chop lettuce and place on serving plates. |
2 | Top with shrimp, avocado and egg. Drizzle Thousand Island dressing on top. Season with salt and freshly ground black pepper and garnish with a wedge of lemon, if desired. |
