Chocolate Chip Cookies
Makes 35-40 2-oz. Cookies
*13 ounces (26 tablespoons) unsalted butter, soft
*1 cup granulated sugar
*1 cup brown sugar
*2 teaspoons salt
*3 whole eggs
*1 teaspoon vanilla extract
*3/4 cup white chocolate chips
*3/4 cup milk chocolate chips
*3/4 cup dark chocolate chips
*4 cups bread flour
*2 teaspoons baking soda
*1 teaspoon baking powder
1Preheat oven to 325F degrees.
2In a mixing bowl, combine soft butter, both sugars and salt. Using a paddle attachment, cream until smooth. Add eggs, one at a time, and the vanilla extract. Mix until batter is smooth and creamy. Using a rubber spatula, scrape down bowl and mix one more time. Add all of the chocolate chips and mix until combined.
3Separately, sift together flour, baking soda and baking powder. While mixing, slowly add the sifted dry ingredients to the batter. Mix dough until consistent, scrape down sides and mix again, being careful not to overmix.
4Portion dough onto greased or lined cookie sheet. Bake 10-12 minutes, rotating after 5 minutes, just until golden brown.
