Mandarin Chicken Salad
Makes 4 Entree or 6 Lunch Salads
*1 pound cooked chicken
*1 medium cucumber, julienne
*10.5-ounce can mandarin orange segments, drained
*1 bunch scallions, chopped
*4 cups baby lettuces or mesclun greens
*3-ounce can chow mein noodles
*3 tablespoons sesame paste (tahini)
*1/2 cup chicken broth
*2 1/2 tablespoons light soy sauce
*1 1/2 tablespoons rice vinegar
*1 tablespoon dry sherry
*2 tablespoons sesame oil
*1 teaspoon sugar
*1/2 teaspoon salt
1Cut chicken into thin strips. In a large mixing bowl, combine chicken, cucumber, orange segments and scallions and toss to mix. Refrigerate up to 2 hours.
2To prepare the sesame dressing, combine sesame paste and broth in a jar and shake until well mixed. Add remaining ingredients and shake vigorously to mix.
3When ready to serve, arrange lettuces onto a large serving platter. Top with chicken salad mixture. Drizzle with dressing to taste. Top with chow mein noodles.
  • Alternately, serve in 6 individual luncheon portions.
  • Store any unused dressing in the refrigerator.
