BLT Pizza
Makes 4 Servings
*12-inch thin-crust prebaked Italian pizza crust, such as Boboli(R)
*1 teaspoon olive oil
*3/4 cup shredded mozzarella cheese
*6 slices bacon
*2 cups shredded iceberg lettuce
*2 1/2 tablespoons mayonnaise, or to taste
*Kosher salt and freshly ground black pepper
*2 ripe tomatoes, cored, seeded and coarsely chopped
1Preheat oven to 425F degrees. Place a non-stick pizza baking pan in the oven while it comes up to temperature.
2Place pizza crust on preheated pan. Brush top with olive oil. Spread the shredded mozzarella cheese evenly over the crust. Bake for 8-10 minutes or until cheese has melted. Remove from oven.
3Separately, cook bacon in a heavy skillet until crisp. Transfer to paper towels to drain. When cooled, crumble bacon into pieces.
4Toss shredded lettuce with mayonnaise and season with salt and pepper.
5Spread the dressed lettuce over the top of the cheese. Top with chopped tomatoes and crumbled bacon. Slice into wedges and serve immediately.
