
Pacific Rim Peanut-Crusted
Turkey Cutlets
Makes 6 ServingsIngredients
* | 1/2 cup hoisin sauce |
* | 2 tablespoons soy sauce |
* | 2 teaspoons toasted sesame oil |
* | 1 teaspoon chili garlic sauce |
* | 2 teaspoons ginger, peeled and grated |
* | 2 cups honey-roasted peanuts, crushed |
* | 6 turkey breast cutlets, such as Shady Brook Farms or Honeysuckle White |
Instructions
1 | Preheat broiler. Spray broiler rack pan with cooking spray. |
2 | In a shallow bowl, whisk together the first 5 ingredients. Pour half of the mixture into a small microwave-proof bowl and set aside. |
3 | Spread peanuts out on a plate. |
4 | Dip each turkey cutlet into the liquid mixture in the shallow bowl, then press each side of the cutlet into the peanuts. Discard remaining peanuts and mixture in the shallow bowl. |
5 | Place cutlets on broiler rack 6 inches from the heat source. Broil for 4 minutes per side or until cooked through. Transfer cutlets to serving platter. |
6 | Microwave the small bowl of sauce for 30 seconds on high, then drizzle over cooked cutlets. |
Notes
Hoisin sauce and chili garlic sauce are available in the Asian food section of most grocery stores.
