Turkey Chili
Makes 8 Servings
*2 pounds ground turkey, such as Shady Brook Farms or Honeysuckle White
*1 large onion, chopped
*1 green pepper, seeded and chopped
*Salt and pepper to taste
*28-ounce can crushed tomatoes
*3 tablespoons chili powder or to taste
*19-ounce can red kidney beans, undrained
*8 ounces frozen corn
1In a large skillet, combine ground turkey, onion and green pepper. Season with salt and pepper. Saute until turkey is browned and cooked through, breaking it up into pieces as it is cooking. Drain. Transfer to a dutch oven or stockpot.
2Add tomatoes and chili powder. Reseason if desired. Cover and simmer over low heat about 45 minutes, stirring occasionally.
3Add kidney beans and corn and continue to simmer another 45 minutes, stirring occasionally.
