'Queen of Hearts' Lemon Tarts
Makes 6 Servings
*3.4 ounce package lemon instant pudding and pie filling
*2 cups cold milk
*1/2 teaspoon lemon extract
*6 mini graham cracker ready crusts
*Whipped topping
*1 pint fresh raspberries
*Mint sprigs for garnish
1Combine lemon instant pudding mix, cold milk and lemon extract in a large mixing bowl. Beat with a wire whisk for 2 minutes.
2Place graham cracker ready crusts onto a baking sheet. (Remove any plastic protectors.) Ladle pudding into crusts and refrigerate until ready to use, at least 2 hours.
3To serve, top each tart with whipped topping and fresh raspberries. Garnish with a sprig of mint.
