Chilled Maine Lobster Salad
Makes 8 Servings
*2 pounds cooked lobster meat
*3 or 4 ribs celery, chopped
*1/2 teaspoon onion powder
*1 tablespoon fresh lemon juice
*1/2 cup mayonnaise
*Kosher salt and white pepper to taste
*8 New England-style rolls
*Crisp lettuce
1Drain any excess liquid from the lobster meat and chop the meat into bite-size pieces. Combine with the celery, onion powder and lemon juice in a bowl and toss to mix well. Stir in the mayonnaise and season with kosher salt and white pepper.
2Serve on the rolls, adding the crisp lettuce.
  • You may also serve this on top of a fresh garden salad.
