
Chilled Maine Lobster Salad
Makes 8 ServingsIngredients
* | 2 pounds cooked lobster meat |
* | 3 or 4 ribs celery, chopped |
* | 1/2 teaspoon onion powder |
* | 1 tablespoon fresh lemon juice |
* | 1/2 cup mayonnaise |
* | Kosher salt and white pepper to taste |
* | 8 New England-style rolls |
* | Crisp lettuce |
Instructions
1 | Drain any excess liquid from the lobster meat and chop the meat into bite-size pieces. Combine with the celery, onion powder and lemon juice in a bowl and toss to mix well. Stir in the mayonnaise and season with kosher salt and white pepper. |
2 | Serve on the rolls, adding the crisp lettuce. |
