Turkey Breast Diane
Makes 4 Servings
*1 pound turkey breast cutlets, such as Shady Brook Farms or Honeysuckle White
*2 teaspoons lemon pepper
*2 tablespoons lemon juice
*1 tablespoon Worcestershire sauce
*1 teaspoon Dijon mustard
*1 teaspoon parsley, plus additional for garnish
*Lemon for garnish
1Coat a large skillet with cooking spray; heat for 30 seconds.
2Add turkey; sprinkle with lemon pepper and cook for 3 to 5 minutes on each side until browned and no longer pink in the center.
3Combine lemon juice, Worcestershire sauce, Dijon mustard and 1 teaspoon parsley in a small bowl, mixing well. Add to pan and cook until heated through.
4Garnish with lemon and parsley.
