Molten Chocolate Souffle Cake
Makes 8 4-ounce Servings
Ingredients
*1/2 pound salted butter
*1/2 pound sweet baking chocolate
*1/2 cup heavy cream
*1/2 cup all-purpose flour
*4 whole eggs
*4 egg yolks
*1/2 cup sugar
*1/2 teaspoon vanilla extract
*1/2 teaspoon coffee flavor extract
*1/2 teaspoon orange extract
*Butter for greasing
*Granulated sugar for dusting
*Vanilla ice cream or frozen yogurt for serving
Instructions
1Preheat oven to 350F degrees.
2Combine butter, chocolate and cream in a saucepan and melt together at a low temperature. Stir occasionally and do not allow to simmer or boil.
3Remove from the heat and whisk in the flour.
4Separately, combine the eggs, egg yolks and sugar and whip to a thick consistency. Fold the egg mixture, one-third at a time, into the chocolate mixture. Mix in vanilla, coffee and orange extract flavorings.
5Rub the insides of 8 4-ounce ramekins with butter and dust with granulated sugar, discarding the excess. Fill the ramekins with the batter.
6Bake for 15-20 minutes until the cake has "souffleed". If using a convection oven, bake for 10-12 minutes.
7Serve immediately with a scoop of vanilla ice cream or frozen yogurt on top. Enjoy!
