Grilled Chicken & Boursin Cheese Wrap
Makes 1 Wrap for 2 Servings
*1 whole lemon, diced
*1/2 teaspoon fresh oregano
*1/2 teaspoon minced garlic
*1/2 tablespoon minced shallot
*1/2 teaspoon salt
*1/2 teaspoon black pepper
*1/4 cup olive oil
*3 ounces boneless, skinless chicken, cut into strips
*1 spinach tortilla wrap ( you may substitute plain or other flavors)
*2 tablespoon Boursin herb scallion cheese spread
*1/3 cup Daikon sprouts
*1 tablespoon sundried tomatoes, cut into slivers
*2 tablespoons avocado puree or store-bought guacamole
1For the chicken marinade, place all ingredients, except chicken, in a blender or food processor and process until smooth. Start with smaller pieces of chicken meat, like strips of breast or tenders and marinate the meat for 10 minutes (or overnight for best results).
2Oil a grill or pan. Remove chicken from marinade and cook until the meat is cooked through and firm and springs back to the touch.
3Mark the tortilla wrap on the grill or warm in a toaster oven. This will enchance the flavor. Remove tortilla and spread Boursin cheese over half of it.
4Lay the chicken lengthwise and top with some sprouts, sundried tomato and avocado puree. Roll the wrap onto the Boursin side such that the Boursin "glues" the wrap shut.
5Cut the wrap in half to provide 2 servings.
  • EACH INDIVIDUAL SERVING CONTAINS APPROXIMATELY: 204 calories, 17 grams of protein, 14 grams of carbohydrate and 9 grams of fat.
