Meatloaf with Bacon Crust
Makes 6 servings
*2 lbs. ground beef or ground turkey
*2 eggs
*1 small onion, minced
*3/4 cup seasoned breadcrumbs
*1/2 tsp. Italian seasoning
*1/4 cup ketchup
*1 1/2 tbls. Worcestershire sauce
*Salt and pepper, to taste
*5 - 6 slices of bacon
1Preheat oven to 400 degrees.
2In large bowl, combine ground beef or ground turkey, eggs, onion, breadcrumbs, Italian seasoning, ketchup and Worcestershire sauce. Season with salt and pepper.
3Mix together (by hand is best) until ingredients are fully mixed.
4Press mixture into non-stick loaf pan.
5Cover with bacon slices.
6Cook 1 hour, remove from loaf pan and let stand before serving.
