Baked Boneless Turkey Breast with Curried Orange Sauce
Makes 8 Servings
*2 pounds turkey breast roast, such as Shady Brook Farms or Honeysuckle White
*1 tablespoon butter or margarine, at room temperature
*Salt and pepper to taste
*1 cup orange juice
*4 teaspoons cornstarch
*1 tablespoon prepared mustard
*1/4 cup light brown sugar, firmly packed
*2 tablespoons orange marmalade (preferably English-style)
*1 tablespoon grated orange peel
*2 teaspoons curry powder
*1 large seedless orange, peeled and thinly sliced, for garnish
1Preheat oven to 325F degrees.
2Place turkey breast in a shallow baking pan, skin-side up; rub with butter and sprinkle lightly with salt and pepper. Bake, loosely covered with aluminum foil, shiny side turned in, for 1 hour or until turkey is lightly browned. Baste frequently with turkey drippings.
3Combine remaining ingredients, except orange slices, together in a bowl. Spoon sauce over turkey and arrange orange slices on and around turkey. Continue baking, uncovered, for 45 minutes or until meat thermometer inserted into turkey registers 165F degrees. Baste occasionally with sauce.
4Remove turkey; allow to stand a few minutes before slicing. Garnish with orange slices and serve with sauce.
