* | 4-6 large Idaho baking potatoes |
* | 4-6 tbls. butter or margarine |
* | 8 oz. sour cream |
* | 1 bunch scallions, cleaned and chopped or fresh chives, chopped |
* | Salt and pepper to taste |
1 | Preheat oven to 400 degrees. |
2 | Scrub potatoes until clean and pat dry. Pierce the top of each potato with a small slit. |
3 | Bake in oven on middle rack for 1 hour, until potatoes are fork tender. |
4 | Cut potato open. Add butter or margarine into hot potato until melted. Top with sour cream and scatter scallions or chives over. Season with salt and pepper, to taste. |
