Potato Pie
Makes 6 servings
*2 tbls. butter
*4 potatoes, pared
*1 tsp. salt
*1 small onion, chopped
*1 cup cheddar cheese, shredded
*2 eggs
*1 cup milk
*salt and pepper, to taste
*1/4 tsp. Dijon mustard
*2 tbls. chives, chopped
1Preheat oven to 375 degrees.
2Spread butter over sides and bottom of 9 inch round pie plate.
3Shred potatoes coarsley and drain well on paper towels. Sprinkle with 1 tsp. salt and chopped onion. Mix well.
4Press into the bottom and sides of pie plate to form a shell. Sprinkle with cheese.
5In medium bowl, beat eggs with milk, salt, pepper, mustard and chives. Pour over cheese in potato shell.
6Bake for 1 hour until browned and knife inserted into center comes out clean. Let stand for 5 - 10 minutes before serving.
