1 | Preheat oven to 375 degrees. |
2 | Spread butter over sides and bottom of 9 inch round pie plate. |
3 | Shred potatoes coarsley and drain well on paper towels. Sprinkle with 1 tsp. salt and chopped onion. Mix well. |
4 | Press into the bottom and sides of pie plate to form a shell. Sprinkle with cheese. |
5 | In medium bowl, beat eggs with milk, salt, pepper, mustard and chives. Pour over cheese in potato shell. |
6 | Bake for 1 hour until browned and knife inserted into center comes out clean. Let stand for 5 - 10 minutes before serving. |
