Parmesan Cheese Twists
Makes 3 to 4 Dozen
*2 sheets frozen puff pastry, thawed
*1 large egg
*1 tablespoon water
*1/2 cup grated Parmesan cheese
*1/4 cup grated sharp Cheddar cheese
*1 teaspoon dried rosemary
1Preheat oven to 400F degrees. Spray a non-stick baking sheet with cooking spray.
2Lightly flour a work surface and roll out pastry sheets, 1 at a time, to a 12" x 18" rectangle.
3In a bowl, lightly beat the egg and water together to make an egg wash. Lay 1 pastry sheet on a work surface and brush lightly with the egg wash. Working quickly, sprinkle cheeses and rosemary on top. Cover with remaining sheet of pastry, pressing firmly to remove any air pockets.
4With a pastry wheel or sharp knife, cut pastry crosswise into strips about 1/2-inch by about 6 inches. Twist 2-3 times to make a spiral and place on baking sheet. Bake until crisp and golden brown, about 12-14 minutes. Cool on a wire rack.
  • MAKES A GREAT GIFT: Freeze the cheese twists until ready to present as a gift. Then pack in an airtight container and tie a bow or raffia around it. Place in a gift bag with your favorite bottle of red or white wine.
