3-Chile Reduction
Makes About 2 Cups
*2 large Spanish onions, chopped
*5 cloves garlic, chopped
*1 cup ancho paste
*1 cup guajilo paste
*1 cup chipotle paste
*1/4 cup ketchup
*1/4 cup fresh lime juice
*1/4 cup apple cider vinegar
*1/4 cup Worcestershire(R) sauce
1Sweat onions and garlic for 10 minutes. Add remaining ingredients.
2Slow cook at a simmer for 30 minutes. Let cool.
