Marinated Tomatillo Salad
Makes 2 Servings
Ingredients
*5 tomatillos, sliced thin
*1 poblano pepper, roasted, seeded, julienned
*1 jalapeno pepper, pickled in white vinegar
*1/16 red onion, sliced thin
*1 oz. fresh lime juice
*10 cilantro leaves
*2 tbls. extra virgin olive oil
*1 tsp. sugar
Instructions
1Toss all ingredients together and let marinate 1 hour before serving.
