Beer-Cheese Dip
Makes 3 Cups
*16 oz. Monterrey Jack cheese, shredded
*2 oz. blue cheese, crumbled
*1 tbls. unsalted butter, room temperature
*1/3 cup scallions, finely chopped, plus additional for garnish
*1/2 tsp. mustard
*1/4 tsp. hot sauce
*1 tsp. Worcestershire(R) sauce
*2/3 cup beer (about)
*Pretzels and chips
1Combine cheeses, butter, scallions, mustard, hot sauce and Worcestershire sauce in a blender or food processor. At a low speed, gradually add enough beer to the mixture to make a dipping consistency.
2Spoon dip into a serving bowl and sprinkle with scallions to garnish. Refrigerate until chilled. Serve with pretzels and chips.
