Peppermint Crunch Ice Cream SandwichesMakes 4 Servings
|*||1 pint vanilla ice cream, slightly softened|
|*||8 large chocolate cookies or thin brownie bars|
|*||1/2 cup peppermint candies, crushed (See Notes)|
|1||Place a large scoop of ice cream in the center of the flat side of 4 cookies or brownies. Top with remaining cookies or brownies and gently press together until the ice cream reaches the edges. Freeze until firm, about 2 hours.|
|2||When ready to serve, place crushed peppermint candies in a shallow bowl and roll the edges of the ice cream sandwiches in the candies to coat all around.|
- Place whole peppermint candies in a zip-lock plastic bag. Crush with a rolling pin or heavy utensil until candies are crushed into small pieces.
